Banana Protein Muffins

Banana Protein Muffins:

1 cup spelt flour (could use buckwheat for gluten free)
1 cup almond meal
1 tsp baking soda
1/4 cup 
Pure Coco Ltd coconut sugar
1 tsp cinnamon 
1 scoop of Nuzest New Zealand clean lean vanilla protein powder
3 bananas 
1/2 cup Greek yoghurt or natural yoghurt 
1 tsp pure vanilla extract 
2 organic free range eggs
Sliced banana to top and sprinkle of coconut sugar

Directions:

Add banana, egg, vanilla extract into Vitamix and blend or can just mash banana in bowl and mix through egg and vanilla. 
In a large bowl add dry ingredients, mix. Add yogurt and wet ingredients to dry mixture. Mix until all combined.
Line a muffin tin- I use paper cupcake cases, add mixture to each case. 
Place slice banana and a sprinkle of coconut sugar on the mixture. 
Place in a pre heated oven at 170 degrees for 25 minutes.
